Silver Fox Restaurant, Salisbury Big Stop

The Silver Fox Restaurant at the Salisbury Big Stop has become a destination of choice for dining 24 hours a day, 7 days a week. Open on all holidays including Christmas Day, the Silver Fox Restaurant was first developed as a respite for long-distance truckers on route between points across the continent. A concept initiated primarily to cater to the trucker, the restaurant was established on the highway to service the men and women of one of the last frontiers – the open road. In fact, a special section, exclusively for truckers, is comprised of separate seating and a specially assigned waitress.
The Salisbury Big Stop has been able to integrate well into the surrounding community with the help and support of the local townspeople. It has attracted customers from the surrounding areas including the Greater Moncton Area, all able to appreciate the wonderful services this busy and thriving spot has to offer. Folks come from miles around to sample the terrific home-cooked meals at the Silver Fox Restaurant named for Salisbury’s silver fox rearing heritage. The restaurant offers a choice of seating arrangements from the old-fashioned lunch counter, which seats fourteen, to cosy booths and stand-alone tables for anywhere from two to a family-sized crowd. In addition, there are two private rooms large enough for functions, banquets, or parties.
Favourite menu choices are the sumptuous all-day breakfast, fish ‘n’ chips, club sandwiches, and the hot turkey platter. "We make all our meals from scratch, including our decadent desserts," says Paul Lavoie. "We cook six to eight 26-lb turkeys per day. We do not use packaged foods and we pride ourselves on our home-cooked meals, large portions, and our Maritime hospitality!" In partnership with the newly named Circle K Convenience Store, the Silver Fox Restaurant also provides fresh, homemade sandwiches, subs, and desserts to their snack section as well as to their onsite bakery section, which carries freshly made muffins, cookies, cake, and coffee for take-out. The Silver Fox Restaurant is proud of their great food and their wonderful Wall of Fame, which honours local heroes, and pays homage to the area’s early beginnings, and, of course, they have what most road-weary travellers want – washrooms that are immaculate.
The Silver Fox Restaurant is the only component of the Salisbury Big Stop service-related entries to be retained by original lessee Paul Lavoie who continues to maintain a constant presence at the Big Stop. "I want my valued customers to know that I am still here," says Paul Lavoie. "When Alimentation Couche-Tard Inc. of Quebec bought out all of the Irving Convenience Stores and gas outlets under the Circle K name, many people thought I would be gone." Given the option to retain the restaurant facility, Paul Lavoie continues to serve a community which has offered him much support over the years. "I have recently been joined by my son, Steven Lavoie, at the Silver Fox Restaurant where he fulfills the role of Dining Room Manager," says Paul Lavoie proudly. Indeed, with the Salisbury Big Stop since its inception, Paul Lavoie’s dedication to duty has helped to make this spot the thriving business centre it has become, not just to travellers along the way, but to locals from Salisbury and Petitcodiac as well as to scores of patrons in and around the tri-community region of Moncton, Dieppe, and Riverview.
