Auberge inn thyme

The charming Town of Shediac is home to many historic properties, among them the former Murray House which features prominently in Sadie Harper Allen’s A Full House of Fine Singing: Diaries and Letters. Located at 310 Main Street, it is now home to Auberge inn thyme Coffee House & Eatery. This heritage house has taken on a new life as a haven to visitors to our region and local residents alike anxious to leave the hectic pace of modern life behind. At Auberge inn thyme, take a step back in time to the unhurried leisure of a quiet meal lovingly prepared from fresh, local organic ingredients in an elegant diningroom or airy verandah. Have a cosy cup of house blend, pressed coffee, specialty tea, cappuccino, or latte surrounded by the ambience of a bygone era, or enjoy a weekend retreat in any one of the seven wonderfully furnished rooms, each with its own distinctive style in fresh, clean colours, crisp linens, and period furniture also featuring wireless Internet, air conditioned environment, and bath. Throughout the house, accents such as hand-hooked rugs and original paintings are made by Donna McQuillen, Patrick’s mother. Stained glass accents and touches of the modern create an eclectic experience that combine artfully to maintain the historical integrity of the house. The result is that Auberge inn thyme exudes a calming, tailored, and refined quality. It is a place where the organic nature of the outdoors is invited in through spacious windows and garden views.

Auberge inn thyme is owned and operated by Tim Taylor and Patrick McQuillen who invite one and all to drop in, relax, and enjoy all the spaces of this unique inn. Filled with character and charm, the blend of modern amenities, excellent cuisine, and the unmistakable warmth and hospitality of its proprietors all merge to make every guest feel truly welcome. "Everything about our inn reflects to guests how glad we are to have them here," says Tim Taylor. Indeed, in an operation that appears casual and seamless, it is the details that truly convey the commitment to excellence this magical inn reflects. As world travellers themselves, both Tim and Patrick have drawn on knowledge and experience in knowing just what their guests require. The result is a Coffee House & Eatery that specializes in a tasty and exciting menu that caters to good health while delighting the taste buds. "We believe in creating for our guests the kind of foods we would eat ourselves, with quality ingredients and fresh herbs grown in our own garden. We shop for locally produced goods and every dish is made from scratch." Offering a variety of gourmet choices, each meal is a work of art in its own right.

Auberge inn thyme is the perfect spot to drop in for a sumptuous breakfast, indulge in lunch, or linger over dessert and coffee in the evening. They are also open for brunch on Sundays. This is a place where history meets the modern world and a place where the past combines with the present to create new memories to call your own. • I have had 2 wonderful stays at the Inn and each time I was so impressed with the way they changed things up to delight the eye and the pallet. The yummy gourmet food is completely different daily and always freshly made. The Inn is spotless and the gardens are beautiful. You can tell they really care how they present themselves to their patrons. I could live there!
Thank you Patrick and Tim. I love your website. It's beautiful but even better in person.
